Cardamom Aval Payasam, a comforting and aromatic dessert that holds a special place in Onam celebrations. This delightful dish combines the richness of milk with the subtle sweetness of sugar and condensed milk, creating a creamy base that is further enhanced by the fragrant essence of Emperor Akbar Cardamom. The addition of roasted white flattened rice adds a satisfying texture and a hint of ghee’s nutty flavour.
Ingredients:
6 cups milk
2 tsp broken raw rice
1/2 cup sugar
1/2 tin condensed milk
1/2 teaspoon Cardamom powder
1 cup white flattened rice (roasted in ghee)
Directions:
Prepare the Broken Raw Rice: Rinse the broken raw rice under cold water. In a saucepan, add the rinsed rice and 1 cup of water. Bring to a boil, then reduce the heat and simmer until the rice is cooked and tender. Drain any excess water if needed.
Heat the Milk: In a large saucepan, bring the milk to a gentle boil over medium heat, stirring occasionally to prevent it from sticking to the bottom.
Combine Ingredients: Add the cooked broken raw rice to the boiling milk and stir well. Allow it to simmer for about 10 minutes, ensuring the rice absorbs the milk and flavours.
Add Sweeteners and Flavours: Stir in the sugar and condensed milk, mixing thoroughly until the sugar is completely dissolved.
Add the cardamom powder and continue to simmer for an additional 5 minutes, allowing the flavours to meld together.
Incorporate Flattened Rice: Gently fold in the white flattened rice that has been roasted in ghee. This will add a delightful texture and enhance the flavour of the dish.
Finish and Serve: Remove from heat and let the Cardamom Aval Payasam cool slightly. It can be served warm or at room temperature.
