Cardamom Kisses By Chef Aala

We collaborated with the talented Chef Aala, a renowned chef from Bahrain celebrated for her refined approach to elegant desserts and her ability to turn simple ingredients into memorable creations. In this delicate recipe for Cardamom Kisses, she brings together the lightness of meringue with the warm fragrance of Emperor Akbar Cardamom, creating a treat that is crisp on the outside, airy within, and beautifully aromatic in every bite. The gentle spice of cardamom adds depth to the sweetness, giving these meringue kisses a distinctive character that feels both classic and special. This recipe is a lovely example of how Indian green cardamom can elevate even the most delicate desserts with its subtle, lingering flavor.

Ingredients

4 large egg whites at room temperature
3/4 cup caster sugar
A pinch of salt
1/2 teaspoon vanilla powder
1/2 teaspoon Emperor Akbar Cardamom powder
1/2 teaspoon cream of tartar, optional, for stability

Method

Prepare the meringue base by placing the room temperature egg whites, a pinch of salt, and cream of tartar if using, into a clean mixing bowl. Begin whipping the mixture at medium speed until soft peaks form and the egg whites look airy and smooth. This first step is important because it creates the light structure that gives the Cardamom Kisses their delicate texture.

Add the caster sugar slowly, one tablespoon at a time, while continuing to whip the mixture. Take your time with this step so the sugar can dissolve properly and the meringue becomes glossy, thick, and stable. As the mixture is whipped, it should hold stiff peaks and look silky and bright, with a smooth finish that signals it is ready for flavoring.

Fold in the vanilla powder and finely ground Emperor Akbar Cardamom powder with a light hand. The cardamom should be evenly distributed without deflating the meringue, allowing its fragrant notes to blend gently into the sweetness. At this stage, the mixture should feel light, aromatic, and well balanced, with the cardamom adding a soft warmth that lifts the entire dessert.

Line baking sheets with parchment paper and preheat the oven to a low temperature. Spoon or pipe small portions of the meringue mixture onto the prepared trays, keeping them evenly spaced so they bake uniformly. For a beautiful finish, you can shape them into neat rounds or little kisses, depending on the look you want to achieve.

Bake low and slow until the meringues are crisp on the outside and dry to the touch. The slow baking helps preserve their airy structure while giving them that delicate crunch that makes meringues so irresistible. Once baked, turn off the oven and allow them to cool completely before removing them, as this helps them set properly and keeps them from cracking.

Serve the Cardamom Kisses as a light dessert, a festive tea time treat, or a graceful sweet bite for special occasions. Their crisp texture, soft sweetness, and subtle cardamom aroma make them a charming recipe that feels elegant yet easy to love. With the warmth of Emperor Akbar Cardamom in every bite, these delicate meringues become a dessert that is as fragrant as it is delightful.
